Pasta in Creamy Tomato Sauce

- 300 gm pasta of any shape
- Water for boiling
- 2 tsp salt
- 1 tbsp sugar
- 1 tbsp oil
- 6 large tomatoes
- 1 tbsp kashmiri red chili powder
- 1 tsp salt
- 1 tsp oil
- 2 tbsp butter
- 4 tbsp all purpose flour ( maida )
- 2 cup milk
- 2 cup billed vegetables of your choice
- 7 – 8 garlic cloves
- 1 ½ cup fine chopped tomatoes ( 4 med size tomatoes )
- 2 tbsp oil
- Salt according to taste ( approx 1 tsp )
- 2 tsp freshly crushed black pepper powder
- 1 tsp crushed dry basil leaves ( you can add fresh also )
- 1 tsp crushed dry parsley ( you can add fresh also )
- 2 tsp pasta seasoning or according to taste
- 2 tbsp tomato ketchup
- Pasta Seasoning and Fresh parsley leaves for garnishing
- Fill the half pan with water. Boil it will salt, sugar and oil.
- When water starts to boil, add pasta. Boil till pasta get cooked. Turn off flame.
- Drain the water. Transfer the pasta in large strainer. Apply 2 – 3 tsp oil. Mix well. Keep it aside.
- While pasta is boiling mean while chop the vegetables in shape of your choice. Par boil them if required. Make a paste of garlic in mortar-pastel.
- Prepare the tomato puree or you can ready made tomato puree. Recipe of tomato puree is mentioned at the end of recipe.
- Heat oil in non stick pan. Add garlic paste. Saute till raw aroma of garlic goes away.
- Add chopped vegetables and salt. Cook till they get soft.
- Add chopped tomatoes. Mix well.
- Cook till tomatoes get soft and cooked completely.
- Add tomato puree. Mix well.
- Add parsley, basil, black pepper powder and pasta seasoning.
- Cook till sauce become thick and should not contain water portion.
- Meanwhile prepare the white sauce. Recipe of white sauce is mentioned at the end of recipe.
- Add prepared hot white sauce. Mix well.
- Here your creamy tomato sauce is ready. Quickly add boiled and cooled pasta.
- Now your pasta in creamy tomato sauce is ready to serve.
- Garnish the pasta in creamy tomato sauce with parsley leaves.
- Sprinkle the pasta seasoning on top of pasta in creamy tomato sauce.
- Serve hot pasta in creamy tomato sauce with garlic bread or [fusion_builder_container hundred_percent="yes" overflow="visible"][fusion_builder_row][fusion_builder_column type="1_1" background_position="left top" background_color="" border_size="" border_color="" border_style="solid" spacing="yes" background_image="" background_repeat="no-repeat" padding="" margin_top="0px" margin_bottom="0px" class="" id="" animation_type="" animation_speed="0.3" animation_direction="left" hide_on_mobile="no" center_content="no" min_height="none"]bruschetta.
- Crush the tomatoes. Heat oil in a small pan.
- Add crushed tomatoes, Kashmiri red chili powder and salt.
- Cook on slow flame till puree get thick.
- Heat butter in a non stick pan.
- Add maida. Roast on slow flame till flour get brown in color.
- Add milk. White adding milk continuously whisk with wired whisker to avoid lumps.
- Cook till sauce starts to get thick. Turn off the flame. Immediately use it.
You can add cheese to enhance the taste of pasta !!
