Homemade Plain Sev

- Readymade Besan flour - 2 cup
- Water - ½ cup, as per need
- Salt - according to taste
- Turmeric powder - ¼ tsp, optional
- Oil for frying
- In a mixing bowl, add besan flour.
- Add salt and turmeric powder.
- Mix well.
- Sieve properly. Discard bigger particles, if any.
- Gradually add water and make a smooth dough.
- Not too soft, not too tight.
- Open the sev sancha / sev maker.
- Grease all the parts nicely.
- Heat oil in a kadhai.
- Do not feel more than half Kadhai.
- Make a thick log of dough and press it down into the sancha / sev maker.
- Grease and close the sev maker.
- By dropping a small ball, check if the oil is hot enough or not.
- When the oil is hot enough, drop the sev directly in oil by rotating the sev maker in a circular manner.
- Set flame on medium.

- Make 2 circles and rotate anticlockwise.
- Cut the sev threads.
- Cook sev on the consistent flame.
- Once cooked from one side, flip it.
- Cook until bubbles almost disappear.
- Take it out on a kitchen napkin.
- The same way prepares sev out of the rested dough.
