Rinse rice very well. Soak rice in enough water for 30 minutes. Drain the rice and keep aside.
In a pot or nonstick pan boil the water. Add salt, oil and black pepper powder.
Add the soaked and drained rice to the boiling water.
On a low to medium flame cook the rice without the lid. Add extra water if required.
When the rice becomes just cooked, remove the pot from fire and drain the rice.
Rinse the rice in water so that they stop cooking and don't stick to each other.
Cover the rice and keep aside till the rice will get cooled down completely.
Heat the oil in a wok or a pan.
Add the garlic and ginger paste and saute for very few seconds.
Add the spring onions and saute for 2 minutes.
Add all the finely chopped veggies including the cabbage. Increase the flame on a high and stir fry the veggies on a high flame. Continuously and gently toss them.
The veggies have to be stir fried, till they are almost cooked and yet retain their crunchiness and crispiness.
Add the soy sauce, chili sauce salt and pepper. Stir quickly and add the rice.
Add tomato ketchup and vinegar.
Turn off the flame. Here the veg fried rice is ready for your dinner.
Always serve veg fried rice when they are enough warm.
Serve it with any indo china gravy. Believe me there is no need of any side dish while serving it.
