Suvali | Suvari | Meethi Farsi Puri | Kharkhariya recipe

- Maida / APF - 1 cup
- Ghee - 2 tbsp
- Milk - ¼ cup
- Sugar - 2 tbsp
- Cardamom powder - ¼ tsp
- In a saucepan add milk and sugar.
- Cook until sugar dissolved.
- Add cardamom powder.
- Mix well.
- Turn off the flame and let it cool down.
- In a mixing bowl, add maida.
- Add ghee and rub well.
- Gradually add milk and sugar solution.
- Knead a semi-soft dough.
- Make sure do not make a very soft dough.
- If you left with any milk, use it in tea or any other recipe.
- But do not add all milk together.
- Knead it for 5 - 7 minutes.
- Cover it and keep it aside at least for 30 min.
- After 30 min, divide the dough into 20 - 25 equal parts.
- Roll each part and make a smooth ball. Flatten it and keep it aside covered.
- Take one part and roll it into thin puri. Pork it using a fork. Keep it aside.
- Same way roll out 6 - 7 suvali.
- Deep fry them in medium-hot oil until start browning from the edges.
- Flip them a couple of times and fry from both sides.
- Take them out on a kitchen towel.
- Same way roll and fry all suvalis.
- Once cooled down, store in an airtight container.
Always fry on medium-low flame. If you will fry on high flame, then they will start to burn from outside and they will be uncooked from inside.
