Namkeen Kaju Mathri | Kaju Nimki | Masala Fried Kaju

- Maida / APF - 2 cup
- Ghee - ¼ cup
- Salt - 1 tsp, as per taste
- Black pepper powder - 1 tsp
- Roasted cumin powder - 1 tsp
- Chaat masala - 1 tbsp
- Water - ⅓ cup + 2 tbsp
- Oil for frying
- In a mixing bowl add maida.
- Add salt, black pepper powder, and cumin powder.
- Mix well.
- Add ¼ cup of ghee.
- Rub well between the palms.
- Gradually add water and make a tight dough.
- Knead well for 5 minutes.
- Cover it and keep it aside for 30 min.
- After 30 min, divide the dough into 3 equal parts.
- Make a seamless ball from one part and flatten it.
- Roll it in a thick ( 4 mm ) circle.
- Take a small circle-shaped cookie cutter.
- Prepare cashew/half-moon shaped kaju out of it.
- Heat oil in a Kadai for frying.
- When the oil is medium hot, fry them on medium-low flame.
- Flip them at regular intervals.
- Fry on the constant flame.
- Fry until getting a nice pinkish-brown color on the crust.
- Bubbles will almost disappear, remove them onto the plate using a slotted spoon.
- Sprinkle chaat masala according to taste.
- The same way prepares and fries all namkeen Kaju.
