The Eggless Fruit Cake comes under my list of “must have” food during birthdays, Christmas and other festival celebrations. This is my own recipe and it’s a family favorite. Today I have prepared this eggless fruit cake to have it during my travel as it has a shelf life of around 2-3 days in air tight container. The mixture of tutti frutti and nuts helps make it a tasty treat. This eggless fruit cake is heavy, dense cake that have a relatively low flour content and contain lots of mixed dried fruit. This is also one of my favourite tea time cake.

Step-by-Step Eggless Fruit Cake Recipe :
Step 1 : Measure all ingredients and keep aside.
Step 2 : Grease the cake tin with butter and flour or line with Parchment paper.
Step 3 : Roughly chop the nuts. Coat nuts and tutti frutti with maida. Remove excess maida. Keep it aside.
Step 4 : In a bowl mix maida, cooking soda and baking powder. Mix well. Sieve properly and keep aside.
Step 5 : Now you can preheat oven on mentioned temperature for 10 minutes.
Step 6 : Combine butter, sugar and vanilla essence.
Step 7 : Beat them till get white in color and fluffy.
Step 8 : Add maida mixture step by step. Beat on slow speed. In between gradually add milk.
Step 9 : Beat for 1 – 2 minutes. Add maida coated nuts. Mix well.
Step 10 : Pour batter in a greased cake tin. Tap well to remove air bubbles.
Step 11 : Transfer the cake tin into preheated oven.
Step 12 : Once eggless fruit cake will get baked, transfer the tin on wired rack.
Step 13 : When eggless fruit cake get cooled down, unmold the cake. Allow it to cool completely.
Step 14 : Serve fresh eggless fruit cake with tea or coffee. This eggless fruit cake is perfect lunch box recipe for kids.
- 200 gm all purpose flour ( maida )

- 100 gm amul butter
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp vanilla or mix fruit essence
- 150 ml milk
- ½ cup roughly chopped nuts ( roasted almonds, cashews, raisins, dried black berries and candid fruits or tutti frutti)
- Baking time : 30 – 35 min
