I am here wishing that you all try one of my favorite Healthy Paratha recipes as most of them are highly nutritious and healthy to eat. Stock up B-complex, iron, vitamins along with fiber with these multigrain parathas. Serve hot multigrain paratha with fresh curd or pickle of your choice.

Ingredients
- 1 ½ cup white millet ( jowar ) flour
- 1 cup black millet ( bajra ) flour
- 1 cup whole wheat flour (gehun ka atta)
- 1 cup corn ( makai ) flour
- ⅓ cup bengal gram flour ( besan )
- ¾ cup onion ( fine chopped )
- 2 tsp ginger ( grated )
- 7-8 garlic cloves ( grated )
- 3-4 green chilies ( fine copped )
- ¼ cup coriander ( fine chopped )
- ½ cup green garlic ( coarsely crushed ) ( optional )
- 2 tsp chilli powder
- ½ tsp turmeric powder (haldi)
- Salt to taste ( approx. 3-4 tsp )
- 1 ½ cup water
- Oil for roasting
- Whole wheat flour for rolling
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
- Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
- Divide the dough into 16-18 equal portions and roll out each portion into a circle of 15" diameter, using the flour for rolling.
- On a hot tava/skillet/griddle place the rolled multigrain paratha.
- When the base is partly cooked, flip.
- Spread some ghee / oil on the partly cooked part.
- Flip again and this time this side has to be cooked more than the previous side. You will see brown spots on the multigrain paratha.
- Spread some ghee / oil on this side too.
- Flip again once or twice till both the sides are cooked properly. You should see crisp brown spots on the multigrain paratha. You can also press the multigrain paratha edges with a spatula or spoon, so that they are fried well.
- You can also serve the multigrain parathas directly from the tava/skillet straight in the serving plate. Serve hot multigrain paratha along with mango pickle, lemon pickle, green chutney or some yogurt.
The parathas were so tasty and soft, I used Aashirvaad Atta with Multigrains.
