Fresh Sweet Corn is one of my favorite thing to eat anytime. It is sweet and juicy, and I love the smell when I peel the husk. I bought these from my local vegetable market and boiled it at home in a pressure cooker in 2 cups of water up to 5 whistles. I recommend staying away from canned or frozen sweet corn because fresh one tastes better than a tinned one.
I have prepared this salad by mixing boiled sweet corn with freshly chopped vegetables like tomato, onion and green capsicum, sprinkle of salt and black pepper powder with a dash of lemon juice. I have also added Roasted peanuts for that earthy flavor and a nice crunch. For that extra dose of color and flavor, I have added a few chopped Coriander/Cilantro leaves.
Variations for sweet corn salad :
This corn salad is a very flexible recipe. You can add any vegetables, spices, and herbs of your choice. If you have boiled sweet corn kernels handy in your refrigerator, then this is an absolute no-cook recipe. Give this recipe a try with different combinations of ingredients like cucumbers, cherry tomatoes, avocado, carrots, beetroots, red/yellow bell peppers, etc. If you want to eat this as a meal, add tossed paneer cubes, boiled pasta with pasta seasoning, or few toasts slices. If you are allergic to Peanuts, then don’t add them or replace groundnut with roasted cashew nuts. It tastes equally great.

The vegetables which we have used are fresh so that the nutrients remain intact. Sweet Corn salad is full of Vitamins, Minerals, Fiber, Antioxidants, an excellent pre-biotic, good source of protein, and folate. It is low in fat. It improves overall your health. Hence, this corn salad is one of my favorite healthy and nutritious chaats. Groundnuts give healthy fat required for our body.

How to store & Serve :
You can store this sweet corn salad in the refrigerator in an airtight container for a couple of days, but I do not recommend freezing the dish.
Make this Sweet Corn Salad and serve in your next picnic, get-together, party, special events, and occasions. You can have it with your favorite Curry/Sabzi and Bread(Indian Roti/Paratha/Tortilla), Dal-Rice, or as a complete meal for lunch or dinner. You can also drizzle some sev on top of the salad to serve it to your kids as lip-smacking Sweet Corn Chaat. Baked Nachos/Tortilla chips also pair well with this corn salad.

Recipe card for the Sweet Corn Salad Recipe :
- Sweet corn – 1 cup boiled
- Onion – 1 chopped
- Tomato – 1 chopped
- Capsicum – 1 chopped
- Coriander leaves – ¼ cup
- Roasted or soacked peanuts – ¼ cup
- Salt according to taste
- Black pepper powder – ½ tsp or more
- Lemon juice – 1 tbsp
- Boil the corn and take out the corn kernels. Keep it aside.
- Fine chop all the vegetables and keep it aside.
- In a bowl combine corn kernels, peanuts and all fine chopped vegetables. Mix well.
- Add cilantro leaves Mix well.
- Add lemon juice,black pepper powder and salt according to taste. Mix well.
- Serve the salad immediately.
