Ingredients
For Boiling Rice:
- 1 ½ cup rice
- 4 - 5 cup water or according to need
- 1 tsp salt
- ¼ tsp freshly crushed black pepper corn
- 1 tsp oil
- Other Ingredients :
- 2 tbsp oil
- 1 tsp garlic paste
- ½ tsp ginger paste
- ½ cup carrot ( fine chopped )
- ½ cup capsicum ( fine chopped )
- ½ cup cabbage ( shredded )
- ½ cup French beans ( fine chopped )
- 1 cup spring onion ( fine chopped with leaves )
- ¼ cup onion ( fine chopped )
- Salt according to taste ( approx 1 tsp )
- 2 - 3 tbsp red chili sauce or according to taste
- 1 tbsp soy sauce
- 1 tbsp black pepper powder fresh or according to taste
- 2 tbsp tomato ketchup ( optional )
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
- Rinse rice very well. Soak rice in enough water for 30 minutes. Drain the rice and keep aside.
- In a pot or nonstick pan boil the water. Add salt, oil and black pepper powder.
- Add the soaked and drained rice to the boiling water.
- On a low to medium flame cook the rice without the lid. Add extra water if required.
- When the rice becomes just cooked, remove the pot from fire and drain the rice.
- Rinse the rice in water so that they stop cooking and don't stick to each other.
- Cover the rice and keep aside till the rice will get cooled down completely.
- Heat the oil in a wok or a pan.
- Add the garlic and ginger paste and saute for very few seconds.
- Add the spring onions and saute for 2 minutes.
- Add all the finely chopped veggies including the cabbage. Increase the flame on a high and stir fry the veggies on a high flame. Continuously and gently toss them.
- The veggies have to be stir fried, till they are almost cooked and yet retain their crunchiness and crispiness.
- Add the soy sauce, chili sauce salt and pepper. Stir quickly and add the rice.
- Add tomato ketchup and vinegar.
- Turn off the flame. Here the veg fried rice is ready for your dinner.
- Always serve veg fried rice when they are enough warm.
- Serve it with any indo china gravy. Believe me there is no need of any side dish while serving it.
