Besan Lauki Chilla | Gram Flour Bottle Gourd Indian Pancakes | Besan Chilla Recipe
Lauki Besan Chilla is a delicious breakfast option with minimum ingredients. It is tasty and soft in texture.
In Lauki Besan Chilla, you have to make a batter with Besan or Gram flour, Rava or semolina, ginger chili paste, coriander leaves, grated bottle gourd, carom seeds, sesame seeds, salt, curd, and water. Now spread the batter on medium-hot greased tawa and cook till it dries up on top and has a golden brown color. Splash a little oil or ghee drops on it. Flip it and cook from another side too. Chillas are wholesome, healthy, very simple, and quick breakfast or meal options. Looks similar to Dosa/Uttapam. Chilla is also known as Pudla/Poodla in west India. Traditionally chillas are made with just flour and spices only. You can call Chilla- an Indian Pan Cake.
Lauki is also known as Bottle gourd, Calabash, Opo Squash Dudhi, Doodhi, Sorakaya, or Ghiya. It is a summer vegetable but is available in the market throughout the year. It is versatile to use, has numerous nutritional benefits, and is very healthy for your body. It is low in calories, light on the stomach, and easy to digest. It is rich in fiber, vitamins, and minerals. It also helps to reduce kidney and liver inflammation.
Bottle gourd soup feed to people who are recovering from illness. We can give Bottle gourd puree to toddlers. Bottle gourd juice is helpful for people who want to shed their weight and control their diabetes.
Lauki is one of my favorite vegetables, and even my family likes it too. I prepare many recipes like Dudhi na Thepla, Lauki Muthiya, Lauki Sabji, Lauki ka Halwa, Dudhi Chana Dal nu Shaak, and Dudhi Kofta Sabzi. I add some pieces of Lauki in Pav bhaji and even while making Sambar.

Here is the complete recipe card of the Lauki Besan Chilla Recipe:
- Besan – 1 cup
- Rava – ⅓ cup
- Ginger and chili paste or chopped – 2 tsp
- Coriander chopped – ¼ cup
- Lauki grated – 1 cup
- Carom seeds ( Ajwain ) – ¼ tsp
- Sesame seeds – 1 tbsp
- Salt according to taste – 1 tsp
- Curd – ¼ cup
- Water - ¾ cup
- Measure all ingredients and keep it aside.
- Add all ingredients in a bowl.
- In 2 parts add water.
- Mix well and keep it aside for 30 min.
- Heat cast iron or iron Tawa. If not then only use non-stick Tawa.
- Spread a scoop of better evenly on hot Iron / Cast Iron Tawa.
- Spread some oil.
- Cover and cook. Flip when cooked.
- Again cover and cook till done. Same way prepare all chillas.
- Serve hot Chilla with homemade curd, pickle, or chutney of your choice.
