Ingredients
- 120 gm all purpose flour ( maida )
- 60 gm powder sugar
- 20 gm almond ( coarsely grind )
- 60 ml milk
- 60 gm milk solid ( Khoya / Kova / Mawa )
- 60 gm milk powder
- 20 gm butter
- ¼ tsp cardamom powder
- ¼ tsp saffron
- ¼ tsp baking powder
- ¼ tsp cooking soda
- 6-7 almonds for garnishing.
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
- Measure all ingredients.
- Soak saffron in milk.
- Strain flour, baking powder and soda.
- Beat butter and sugar for 3-4 minutes.
- Add milk and milk solids. Gently fold it.
- Add milk powder, flour mixture, cardamom powder and crushed almond. Gently fold it.
- Don’t over mix.
- Pour equal quantity of the batter into 6 greased and dusted ( or use cupcake liner ) 68 mm. (2½”) diameter aluminum molds. ( approx 65 gm in one portion ) .
- Garnish with almonds.
- Bake in a pre-heated oven at 180 degree celsius for 10 -15 minutes. Insert a toothpick or knife in the cupcake. If it comes out clean your cupcake is ready.
- Allow it to cool completely and serve.
