Are you craving for some roadside Chatpati Chaat/ Bhel? So let me share with you an extremely delicious, yummy and mouth-watering Sprouts Chaat Or Matki Bhel recipe. This is not just full of bursting flavors but healthy too.

Chaat/Bhel is an Indian street style savory snack recipe made using puffed rice, veggies, chutneys, and spices. There are many popular versions of chaats sold by vendors in markets or streets of India. It tastes so delicious with savory, sweet, and spicy flavors.

Sprouts Chaat Matki Bhel

 

In this sprout chaat recipe, I mixed cooked sprouts, puffed rice, and chivda/chewda mixture typically known as Farsan with the sprouts. I also added a few veggies, groundnuts, a drizzle of lime juice, and seasonings like chili powder, chaat masala, and salt.

In this sprouts chaat recipe, I used Sprouted Moth Beans. It is also known as Matki in Maharashtrian cuisine. Few well-known dishes like Misal Pav, Matki curry, Matki salad, etc are made from this moth bean. Matki is a good source of proteins and vitamins. They are high in fiber. Nowadays you can easily find these moth beans online or at local grocery shops. In Maharashtra, Sprouted moth beans are easily available at vegetable shops. You can easily prepare them at home.

Do you know that sprouting of beans improves the absorption of vitamins and minerals in our body? Yes, that’s true. It improves digestion and prevents constipation due to high fiber content. Hence, this sprout chaat is one of my healthy and nutritious street chaats. Matki bhel is healthy and low in calories so great for people who want to shred their kilos.

Sprouts Chaat Matki Bhel

If you are not a fan of Moth bean or Matki then you can replace it with one of your choice of any sprouted beans. You can also customize it with sprouts like chana or moong, veggies like cucumber, tomato, onions, carrots, beetroot, fruits like grapes, pomegranate, or raw mango to enhance health quotient. Top this Matki bhel with some Coriander leaves or Cilantro for some color and flavor.

Serve this street style sprouts chaat or matki bhel at home as an evening snack. Make sure to serve these sprouts chaat immediately once it is prepared else it will become soggy.

Ingredients
  • Cooked moth sprouts/matki - ¾ - 1 cup
  • Puffed rice/murmura - 2 cup
  • Mix farsan/Sev - ½ cup
  • Roasted peanuts - ¼ cup
  • Onion - 1 chopped
  • Tomato - 1 chopped
  • Coriander leaves - ¼ cup chopped
  • Lemon juice - 1 big lemon or according to taste
  • Black salt - ¼ tsp
  • Chaat masala - ¼ - ½ tsp
  • Chili powder - ¼ tsp or according to taste
  • Roasted cumin powder - ½ tsp
Instructions ( 1 cup = 250 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml)
  1. Cook or boil the sprouts with very less amount of water.
  2. In a deep mixing bowl add murmura/puffed rice.
  3. Add sprouts, farsan, and roasted peanuts.
  4. Add chopped onion and tomatoes.
  5. Give a quick mix.
  6. Add black salt, chaat masala, cumin powder, and chili powder according to taste.
  7. Again quickly mix them.
  8. Lastly, add chopped coriander leaves and lemon juice. Mix it.
  9. Garnish them with some fresh coriander leaves and serve immediately.
Notes
You can replace moth beans it with one of your choice of any sprouted beans.
